Creole Shrimp & Cheese Grits



4 cups of water

Salt and pepper

1 cup grits

2 tablespoons butter

2 cups cubed mild cheddar cheese

1 pound shrimp, peeled and deveined

4 teaspoons lemon juice

2 tablespoons chopped parsley

1 cup chopped sweet onions

1 cup chopped green peppers

1 large clove garlic, minced

2 teaspoons of olive oil

Zatarains Creole Seasoning



Bring water to a boil. Add salt and pepper. Add grits and cook until water is absorbed, about 20 minutes. Remove from heat and stir in butter and cheese.

Rinse shrimp and pat dry. Season the shrimp with a generous amount of Zatarains seasoning. Set aside.

Add the green peppers, onions, garlic, and olive oil to a large skillet. Sautee for approximately 10 minutes, or until tender. Once tender, add the shrimp and lemon juice. Saute until the shrimp are cooked, about 3 minutes.

Spoon grits into a bowl. Add shrimp and mix well. Serve & Enjoy.
