Vegetarian lasagna cupcakes

I love lasagna and I love cupcakes...funny what happens when you google your favorite things =) These little delights are amazing! 


1 cup marinara sauce

1/2 small onion chopped

2 garlic cloves chopped

1 bag of Boca crumbles (soy hamburger crumbles)*

24 wonton wrappers

8 ounces shredded mozzarella cheese

8 ounces shredded cheddar cheese

4 ounces Ricotta cheese

(optional) basil for garnish

*Easily can be substituted for ground beef or turkey ¾ pound

Preheat oven to 375 degrees. Spray muffin pan with cooking spray. Drizzle olive oil in pan and add chopped garlic gloves and onions. Add crumbles and warm for 10 mins. Cut wonton wrappers into circle shapes using the top of a glass. I was able to cut four at a time.

Press a wonton wrapper and press it into the cupcake pan. Start layering your lasagna cupcakes. Sprinkle a little cheddar cheese, ricotta cheese, and mozzarella cheese. Top with a little crumbles and marinara sauce. And repeat the next layer. Top with remaining shredded cheese. I sprinkled basil over the cheese.

Bake for 18-20 minutes or until edges are brown. Remove from oven and let cool for 5 minutes. To remove I used a spoon to scoop the cupcake out. Maybe I sprayed too much cooking spray, but they came out perfect.  Aproximately 15 minute prep time. Total cook time 35 minutes.
